How we create exceptional food

Exceptional is a claim most food businesses make about themselves.
At Artees it has to be proven before a product is allowed to launch.

  1. 01

    SET THE BENCHMARK

Identify the strongest comparable market product, and define
exactly what it delivers: taste, texture, consistency.

  2. 02

    DEVELOP & REFINE

Build the Artees formulation and refine it repeatedly
    against that benchmark.

  3. 03

    COMPARE WITH THE BENCHMARK

Compare the Artees product with the benchmark
    for taste, texture and consistency.

  4. 04

LOCK IT ONLY WHEN IT WINS

The formulation advances only after it outperforms the benchmark.
If it doesn’t, it doesn’t launch.

The result is that every product in the franchise range is based on a formulation proven against the strongest comparable market product.

How we benchmark and evaluate our products → · How Artees develops exceptional food →

How we make it without a chef

At Artees, quality is decided in the formulation and protected by the production system.
People still make the food, but the result does not depend on the judgment of one chef.

  1. 01

    LOCK THE FORMULATION

Once a product meets the development standard, its formulation is locked. The owner
holds and applies it. Employees perform only their assigned steps without
receiving the complete formulation or owner-only procedures.

  2. 02

    DECIDE BEFORE PRODUCTION BEGINS

The decisions that determine the result are made in advance
and written into the process. The owner applies the critical
controls; staff do not have to improvise at the bench.

  3. 03

    OPERATE, MONITOR & VERIFY

Employees carry out assigned work and operate equipment where
required. The owner oversees production, monitors the controls
and verifies that the standards are followed.

  4. 04

    CATCH DEVIATIONS EARLY

Defined checks identify departures from the standard. The owner
investigates and takes corrective action before the product
    is released to customers.

People make the food. The owner protects the standard.

The system is designed to help reproduce the result across people, batches and locations.

How the production system works →

How we make it affordable

Food at this level normally carries the costs that come with it — a skilled kitchen,
a prime address, a setting to match. Artees reduces those costs without lowering
the standard of the food.

  1. 01

    LABOR

The system removes the need to hire an expensive chef and
experienced staff that food at this level would normally
require. Trained people execute defined processes.

  2. 02

    MANAGEMENT

Artees is built for active owner-operators. The owner works
in and leads the business, rather than carrying the cost of
a management layer to run it.

  3. 03

    OCCUPANCY

Because the draw is the product rather than the address, the store
does not have to depend on prime location foot traffic.

What makes a sweet shop worth seeking out? →
  4. 04

    BUILD-OUT

The value sits in the food rather than in an elaborate physical
setting, which allows a simpler and less expensive build-out.

Artees does not make exceptional food affordable by simplifying the food.

It makes it affordable by reducing the costs around producing and selling it.

How we made it possible

Six years of hands-on development at Artees Kitchens & Labs.

Artees went beyond recipes. Over six years, products and production methods were built through
repeated formulation work, ingredient evaluation, equipment trials, process testing and documentation.

  1. 5

    Fitted Kitchens & Labs

Working environments used to develop and test
    products and production methods.

  2. 100+

    Equipment & Appliances Evaluated

Different equipment was tested to understand what produced
the required result and how that result could be controlled.

  3. 700+

    Tools & Process Aids

Tools and process aids were evaluated for how well they allowed
a defined process to be carried out the same way each time.

  4. 600+

    Ingredients Evaluated

Ingredients were tested across the wider Artees platform to understand
their effect on the finished product and the production process.

The work was not only to create exceptional food. It was to understand what makes the food exceptional,
how to reproduce it without depending on a chef, and how to build a practical production system around it.

The Story Behind Artees

Mamun Chowdhury, founder of Artees
Mamun ChowdhuryFounder, Artees

If I could do it,
you can too.

Having lived in the USA, Europe, the Middle East, India and Bangladesh, I was fortunate to enjoy great food everywhere—but I never learned to cook it.

In the nineties, I owned and operated a South Asian restaurant in the UK. Running a restaurant was different from cooking the food myself, but it showed me a lasting challenge: keeping food consistently good without relying entirely on individual talent.

During the COVID lockdowns in 2020, I finally tried cooking. My first lasagna was terrible. So was the second. YouTube videos and cookbooks helped, but only got me so far.

Determined to understand why, I turned to food science and professional cooking books. My technology background helped me approach cooking as a process I could understand, test and improve—through ingredients, temperature, timing and technique.

After repeated trials, the food improved. But making a great dish was only the beginning. Could a trained person reproduce that quality consistently? That question became the foundation of Artees.

I converted 3,000 square feet of my home into kitchens and labs, hired a team of six, installed specialist equipment, appliances and accessories, and procured the finest ingredients.

Over six years, we developed 319 products across 10 food domains, with documented methods, defined procedures and measurable controls.

Today, Artees gives prospective owners the starting point I never had. You don’t need years of product development or a professional chef. You need the drive to learn the system and apply it consistently.

You still have to put in the work—but you don’t have to be a chef to begin.I wasn’t.

Why We’re Franchising Without a Store of Our Own

Artees Sweets was designed from the beginning to be run by trained, certified owners. Every store will be owned and operated by a franchisee to help protect our intellectual property and maintain product quality.

  1. The Owner Protects Production Knowledge

The trained, certified owner receives the complete formulations and operating procedures from Artees. They have a direct interest in protecting that knowledge.

    Owner securing confidential production procedures
  2. Hired Managers Increase the Risk of Disclosure

A company store would require giving hired managers the same complete production knowledge. When managers leave, the risk of disclosure increases.

A departing manager carrying a production binder
  3. Owners Have More at Stake in Maintaining Quality

A hired manager works for a salary. An owner’s personal stake gives them a stronger reason to follow Artees’ standards and maintain quality every day.

We are not the first.

There are other food brands that have launched through franchised outlets without a store of their own.

Built for Active Owner-Operators

Artees Sweets is for those who are willing to learn, practice, follow defined procedures and take responsibility for the results.

Why we don't operate our own stores →

01

Learn the System and Become Certified

Artees Sweets provides 28 days of owner training covering production, quality control, food safety, service and store management. You must pass the required opening certification before your store can open.

02

Work in and Lead Your Store

The owner must be present during daily production and peak hours, lead the team and remain accountable for quality and operations. This commitment is not compatible with another full-time job or handing the business to a hired manager.

03

Train and Develop Your Team

Artees Sweets trains the owner; the owner trains the employees. You receive the complete formulations and operating procedures, including owner-only procedures. Employees learn their assigned tasks without receiving the complete formulations or restricted production knowledge.

04

Plan for Temporary Absence

Temporary absence requires Artees Sweets’ approval. Absences should be planned in advance, and Artees Sweets supports approved absences so the store can continue serving customers to the same standard.

Location Selection

A successful location requires more than an available storefront. Artees Sweets evaluates potential sites around the customer base, operating feasibility and the requirements of the production system. Site evaluation considers:

  • 1Target-customer concentration
  • 2Modeled customer demand
  • 3Expected order value and purchase frequency
  • 4Rent, utilities and operating feasibility
  • 5Production and retail requirements
  • 6Access, delivery paths, zoning and permits

Final approval is based on overall feasibility and detailed site evaluation rather than foot traffic alone.
