Why Artees Sweets Does Not Operate Its Own Store
Every Artees store is run by its owner. Artees Sweets does not operate company-owned stores or a pilot store. This is by design. The Artees model depends on an owner working in every store.
Each Artees store procures its ingredients locally and makes every product on site. Artees Sweets does not keep part of the production process in a central kitchen or supply finished components to its stores as part of ordinary store production.
Instead, the franchise owner receives the complete product formulations and standard operating procedures, including the owner-only procedures. As a result, the owner in every store holds the full production knowledge, and protecting that knowledge is the primary reason Artees Sweets requires owner-operators.
What the owner receives
Artees Sweets trains and certifies the franchise owner. The formulations and owner-only procedures stay with the owner. Employees do not receive them.
The owner, not Artees Sweets, trains the store’s employees to perform their assigned work within the Artees system.
Why the owner works in the store
The formulations and owner-only procedures are applied during daily production, so the person who holds them must be in the store every day. That person is the owner. The owner leads the team, oversees production and takes responsibility for the quality of the food. The owner may have supervisors on the team, but may not hand the running of the store to a hired manager.
The standard operating procedures also set out how the store operates when the owner is temporarily absent, without exposing the formulations or owner-only procedures.
Why Artees Sweets will not operate a company store
A company-owned store would have no franchise owner working in it. To run it, Artees Sweets would have to give the formulations and owner-only procedures to a hired manager, an employee with access to knowledge reserved for owners. Employee turnover would increase the risk of that knowledge leaving the business, and quality would depend on a manager rather than an owner.
A pilot store would be a company-owned store and would face the same problem. The founder cannot fill the owner’s role himself. He runs the franchisor: he develops products, trains and certifies owners, and supports franchisees. He cannot also work in one store every day.
What we offer instead of a pilot store
Artees Sweets has a three-session product-evaluation system. It gives prospective owners an opportunity to assess the food before deciding whether to proceed.
Artees Sweets also uses a licensed shared commercial kitchen in New York City for product validation, limited pre-launch sales and owner training.
What this means for you
As an Artees Sweets owner-operator, you are trained and certified by Artees Sweets and receive the complete product formulations and standard operating procedures, including the owner-only procedures.
You train and lead your employees, work in the store every day, and take responsibility for how the food is made and for its quality.
